Easy Deconstructed Kabobs

To me, a good weeknight meal is one that has minimal ingredients, takes under 30 minutes, and is one that the whole family will love! These Easy Deconstructed Kabobs hits all of those aspects of a great weeknight meal. I am a big fan of kabobs in the summer, but sometimes I just don't want to take the time to get everything on the skewer just to take it off again to eat! This recipe has all the aspects of a regular kabob but takes way less time.

A good kabob starts with really good meat. For this recipe, I used beef tips from Greensbury Market. They were already cut to the perfect size. All I had to do was defrost them and marinate them for this meal. Of course, you can also use any of your favorite meat- chicken, shrimp, etc. However, my biggest tip for a quick meal is buying meat that is already pre-cut into pieces for the kabob. This takes the work out of having to prepare the meat.

What makes this recipe really easy is that I use a pre-made marinade from The New Primal. If you have been around for a while, I love making my own sauces and marinades to cut costs. However, sometimes for my own sanity, it is worth spending the extra money to have a super easy meal on the table! There are some really great bottled products out there that are just as delicious as homemade and have minimal ingredients. That is what I look for when I am shopping for bottled products!

Tips for Easy Deconstructed Kabobs:

  1. As I mentioned above, use any meat that you and your family enjoy!

  3. You can do this in a cast iron on the grill to keep your house cool in the summer, or on the stove if you prefer.
  4. Serve this over any rice of your choosing. To make it Whole30 compatible, cauliflower rice is a good option. If you like rice, quinoa, or any other grain, those are delicious too!

Ingredients
  

  • 1 lbs Beef Tenderloin Tips
  • 2 cups Pineapple Cubed
  • 1 Green Bell Pepper Cubed
  • 1 Red Onion Cubed
  • 1 bottle Classic Marinade from The New Primal
  • 1 tablespoon Garlic
  • 1 teaspoon Salt and pepper
Get Recipe Ingredients

Instructions
 

  • Combine all the ingredients into a gallon size ziplock back or a large bowl. Marinade in the fridge for 1-4 hours.
  • When you are ready to cook, heat a large pan (I like cast iron) to medium high heat. Pour everything that has been marinated, including the sauce, into the pan.
  • Cook for 20 minutes or until the meat is cooked through and veggies are fork tender.
  • Serve over your favorite grain or veggie (cauliflower rice, rice, quinoa).
