    Chicken Tortilla Soup

    It is almost October, which means temperatures are dropping- especially here in the mountains! It is the perfect time for some soup. One of my favorite soups growing up was Chicken Tortilla Soup... mostly for the tortillas and sour cream. Ever since changing my eating habits, I haven't found a tortilla soup that I love. I finally perfected this recipe to one that I want to eat all winter long.

    One tricky part of perfecting this recipe is that most use beans and corn, both of which I love but they don't love me back. I needed to find a similar texture of foods that matched this otherwise your Chicken tortilla soup is basically broth. I thought about potatoes, but that was a little off to me. Finally, I settled on cauliflower! Cauliflower rice to be specific. This adds some heartiness to your soup, without changing the flavor.

    Another secret to this recipe is the flavor punch from Mesa de Vida Smokey Latin recipe starter. This is a fantastic product that adds both flavor and veggies to your meal. It makes this soup go from good to delicious because it adds just a hint that you can't get just from spices. You can get this on their website, Amazon, or most Whole Foods.

    You can make this recipe both in the Instant Pot or on the stove, which is my favorite kind of soup. Sometimes I forget to thaw my chicken, so the Instant Pot really comes in handy. Other times I just want one pot to clean so the stove is easier. It is totally your choice and the instructions to both are in the recipe!

    Tips for Chicken Tortilla Soup:

    1. This is a great recipe for leftover chicken that is already cooked, it doesn't have to be freshly cooked chicken.
    2. Depending on how spicy you like it, feel free to cut the jalapeno down to just half of one.
    3. This recipe store GREAT in the freezer so don't hesitate to double the recipe.
    4. You can use any sour cream or tortillas that work for your body. I prefer Forager Sour Cream (dairy-free) and Siete Tortillas (grain-free). 
    5. To make this Whole30 compatible you can always leave out the tortilla strips- it is still so delicious!

    Chicken Tortilla Soup

    Ingredients
      

    • 1 lbs Chicken Cooked and cubed
    • 1 tablespoon Olive oil
    • 1 Red bell pepper
    • ½ White onion
    • 1 Jalapeño
    • 1 cup Cauliflower rice
    • 1 can Fire roasted tomatoes
    • 1 can Green chili
    • 2 tablespoon Mesa De Vida Latin
    • 4 cups Chicken broth
    • 2 cups Water
    • 2 tablespoon Chili powder
    • 1 tablespoon Cumin
    • 1 tablespoon Garlic
    • 1 teaspoon Paprika
    • Salt and Pepper

    Toppings

    • Avocado slcied
    • Lime wedge
    • Dairy-free sour cream I use Forager
    • Siete tortilla strips leave off if doing Whole30

    Instructions
     

    • Heat a large pot to medium-high heat with 1 tablespoon olive oil inside.
    • Finely dice the red bell pepper, white onion and jalapeno to equal size pieces and put them in the pan. Saute for about 5 minutes or until the onions are translucent.
    • To the same pan add the broth, water, Mesa De Vida Smokey Latin starter, chicken, green chilis, chili powder, cumin, paprika, garlic, salt and pepper.
    • Before you put the fire-roasted tomatoes in the pan, blend or puree for about 10 seconds, then mix it into the pan.
    • Bring the soup to a boil and turn back down to medium and let it simmer for about 15 minutes. If you are not using cooked chicken, boil the soup until the chicken is cooked through.
    • Add 1 cup cauliflower rice to the soup at this point and simmer for another 5 minutes.
    • While the soup is simmering, slice your Siete Tortillas into strips and either air fry for 3 minutes or you can broil them for 3 minutes in the oven.
    • Serve your soup and top with tortilla strips, avocado, sour cream and a squeeze of lime. Enjoy!

    Notes
