    Greek Inspired Chicken Salad

    Some days (or most days) all you can get down is a super quick lunch. One of the easiest lunches to meal prep for the week is chicken salad! You add any flavor you like, use left-over chicken and just grab some veggies to eat with it. It takes no time and actually hits everything you need in a meal- protein, fat, and veggies. This Greek Inspired Chicken Salad is super flavorful and is an easy summer lunch.

    During the summer time I love meals that require almost no cooking and have lots of fresh veggies. This easy, on-the-go lunch is little to no cooking- depending on if you use pre-made chicken or not! If you want to make the chicken yourself, you can make it ahead of time or use leftovers from the night before. Another idea that makes that even faster is to get a rotisserie chicken from the grocery store to shred. Either option is great!

    When I am planning meals for the week, I typically plan the same breakfast and lunch all week so that it is one less thing to think about in the morning. I change up these meals from week to week so I don't get burnt out, but keeping it the same throughout the week can make prepping really easy and take the decisions out of your day!

    Tips for Greek Inspired Chicken Salad:

    1. Use rotisserie chicken to make this a super easy meal.
    2. Add any veggies you like to the mix or on the side.
    3. This can also make a great appetizer if you put it on toasted baguette or cucumber slices.
    4. Use your favorite Greek salad dressing instead of all the spices in the sauce.

    Greek Inspired Chicken Salad

    Ingredients
      

    • 1 lbs Cooked chicken breast shredded
    • 1 cup Avocado mayo Chosen foods
    • 2 tablespoon Red wine vinegar
    • 1 tablespoon Kalamata olives chopped
    • 1 tablespoon Red Onion chopped
    • 1 tablespoon Pepperoncini chopped
    • 1 teaspoon Garlic powder
    • ½ teaspoon Parsley
    • ½ teaspoon Dill
    • ½ teaspoon Oregano
    • ½ teaspoon Onion powder
    • ½ teaspoon Salt
    • ½ teaspoon Pepper

    Instructions
     

    • Combine all the ingredients except the chicken into a bowl and whisk together.
    • Pour sauce over the shredded chicken and mix together until the chicken is thoroughly coated.
    • Serve with your favorite veggies, crackers or bread. Enjoy!
