    Thai Inspired Chicken Burgers

    If you like my Asian Inspired Chicken Meatballs, these Thai Inspired Chicken Burgers are a spin-off of those, but in a burger version! Meatballs are a little more work and if you make burgers out of them it's faster and the perfect weeknight meal. These have more of a curry flavor than the meatballs, which adds a whole new dimension to them! 

    If you haven't noticed, I love Asian inspired flavors!! I could eat it all day every day. Thai food, pho, sushi, any of it... I love it. Which is why I love bringing these flavors into my kitchen and creating my own meals with them. Playing with these spices is so fun to me because they are so dynamic. They also have a lot of health benefits! For example: ginger is soothing for your stomach. Curry is another one, it has a lot of anti inflammatory properties. So not only am I playing with lots of flavor, I am also helping my body heal itself!

    You might also wonder why I use ground chicken so often and that is because for 10 years I did not eaten beef or pork! (What!!). Yes that is real life and I have had to find ways to work around it, but most of my ground chicken recipes would be just as good with pork or ground beef! Now you are thinking how boring I must be for eating chicken for the last ten years, but that is where my food freedom is at and why I love bringing so many different flavors into my house to experiment with. I have added some meat back into my life but still much prefer chicken over anything else at this point.

    Tips for Thai Inspired Chicken Burgers:

    1. Make lots of these patties at the same time to freeze for later.
    2. If you don't want any spice, use a green bell pepper instead of a jalapeno.
    3. The sauce for this burger goes great on salads, veggies and so much more!

    Thai Inspired Chicken Burgers

    Ingredients
      

    Burgers

    • 1 pound ground chicken
    • 1 tablespoon avocado oil
    • 1 jalapeño finely diced
    • 1 cup fresh cilantro
    • 1 large carrot shredded
    • 1 tablespoon coconut aminos
    • 1 teaspoon Sriracha
    • 1 tablespoon garlic powder
    • 1 teaspoon curry powder
    • 1 teaspoon ginger powder
    • ¼ teaspoon red pepper flakes
    • Salt and pepper

    Curry Sauce

    • ¼ cup coconut milk
    • 1 tablespoon coconut aminos
    • 1 tablespoon rice vinegar
    • 1 teaspoon Sriracha
    • 1 teaspoon curry powder
    • 1 teaspoon ginger powder
    • 1 teaspoon garlic powder

    Asian Slaw

    • Cole slaw mix
    • 1 tablespoon coconut aminos
    • 1 tablespoon rice vinegar
    • 1 half lime juiced

    Instructions
     

    • Combine all of the burger ingredients together in a mixing bowl and mix together. Be sure it is all combined, but not to over mix or the meat will get dry.
      1 pound ground chicken, 1 jalapeño finely diced, 1 cup fresh cilantro, 1 large carrot, 1 tablespoon coconut aminos, 1 teaspoon Sriracha, 1 tablespoon garlic powder, 1 teaspoon curry powder, 1 teaspoon ginger powder, ¼ teaspoon red pepper flakes, Salt and pepper
    • Heat a skillet or pan to medium heat with the avocado oil. Cook burgers on each side for about 5-6 minutes. Depending on how thick you made the burgers, you may need a little longer to be sure that it is cooked through.
      1 tablespoon avocado oil
    • While your burgers are cooking, whisk together all the Curry Sauce ingredients and combine ingredients for the slaw in a separate bowl.
      ¼ cup coconut milk, 1 tablespoon coconut aminos, 1 teaspoon Sriracha, 1 teaspoon curry powder, 1 teaspoon ginger powder, 1 teaspoon garlic powder, 1 tablespoon coconut aminos, 1 tablespoon rice vinegar, 1 tablespoon rice vinegar
    • When burgers are done, serve over the slaw and poor curry sauce on top. I love serving this with some fries and cucumbers! Enjoy!
      Cole slaw mix, 1 half lime
