Can you believe I used to hate seafood? I never would even think about touching it when I was little. Come to find out, it was definitely an acquired taste for me. Now I love most fish, sushi, and anything in between. However, this did not just happen overnight. I had to find ways that I liked fish to really start enjoying it. If you are anything like me... if something is crunchy, I will eat it. This is exactly why I created this Walnut Crusted Salmon! It is crunchy, flavorful, and a great way to eat salmon whether you are a new fish eater or not!
Typically I love salmon in the air fryer because it is so easy, however, this one is cooked in the oven and I promise it's just as easy! The crust Is perfectly golden brown and the fish isn't get dried out. It is light in flavor with lemon that really brings out the delicious flavor of the salmon. Combined with dill and dijon... which is the perfect combo.

Tips for Walnut Crusted Salmon:
- If you are not doing a Whole30 and want a little extra sweetness- add a teaspoon of honey
- You can cook this on entire fillet if you are cooking for a family, just double the crust recipe
- I love asparagus as a side, but it would go great on quinoa, rice, or even on a salad.

Walnut Crusted Salmon
Ingredients
- 2 Atlantic Salmon fillets I like Greensbury Market
- 1 cup Walnuts
- 1 tablespoon Avocado oil
- ½ Lemon juiced
- 1 tablespoon Dijon mustard
- 1 tablespoon Garlic minced
- 1 teaspoon Dill
- Salt and pepper
Instructions
- Preheat your oven to 400 degrees.
- Combine walnuts, avocado oil, lemon juice, dijon mustard, garlic, dill, salt and pepper into your food processor. Pulse until the texture of walnuts is finely chopped- not quite a paste, but it should stick together.
- Place your salmon on a sheet pan covered with foil that is coated in non-stick spray. Put a small amount of avocado oil and salt/pepper on your salmon. Then put your walnut mixture on top of your salmon (half on one fillet and half on the other).
- Cook in the oven for 18 minutes or until salmon is cooked through- keep in mind everyone's oven is different so it may need another minute or two. If you are using an air fryer, cook on 375 degrees for 12 minutes.
