To get the cauliflower into bite-sized florets, either cut the cauliflower using a knife, or you can leave the plastic on, bang the head of cauliflower stem side down on the counter and rotating a quarter turn until it falls apart in the plastic.
Put the florets into a large bowl and pour the buffalo sauce in. Mix until the cauliflower is coated thoroughly.
Dump the cauliflower onto a sheet pan and place in the oven for 25 minutes or until fork tender.
Serve with ranch dressing or your favorite dip and enjoy!
Notes
I used to hate chopping cauliflower because it makes a mess! Now I leave it in the plastic, and bang it on the counter a few times stem side down. It breaks apart the stem from the florets and doesn't even make a mess!
