Ingredients
  

  • 2 Chicken Breasts
  • 1.5 cup Orzo
  • 1 tablespoon Olive OIl
  • 1 tablespoon Butter
  • 3 cups Chicken Broth
  • .5 cup Frozen Peas
  • 1 cup Mushroom diced
  • 1 Shallot finely diced
  • 2 cloves Garlic minced
  • 1 teaspoon Italian seasoning
  • .5 teaspoon Sage
  • 1 cup Parmesan Cheese
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large fry pan and add chicken breast to the pan. Season the chicken with salt and pepper and cook for 8 minutes per side or until the internal temperature reaches 165 F.
  • Remove the chicken from the pan and add the mushrooms and shallots and saute for 5 minutes.
  • Then add the peas, garlic, salt, pepper, Italian Seasoning, sage and red pepper flakes to the pan and butter saute for 2 minutes or until the butter is melted.
  • Add the orzo to the pan and toast for about a minute. Then add chicken broth to the mix and bring to a boil. Once the brother is boiling bring turn the heat down to medium, cover, and let it simmer for 8-10 minutes.
  • Uncover the pan and stir the orzo, making sure nothing is sticking to the bottom. Add the Parmesan cheese to the pan and stir in. Continue to slow stir the orzo until all the liquid is absorbed.
  • Add the chicken back to the pan. Then serve and enjoy!

Notes

  • Gluten-free Orzo: If you are gluten-free, you can easily swap in your favorite gluten-free orzo. Personally, I like Banza pasta orzo best! 
  • More Veggies: If you are looking to get some more veggies in this meal, I love adding baby spinach, red bell peppers, or even artichoke hearts to this meal.
