Buffalo Chicken Sweet Potato

Ingredients
  

  • 1 medium size sweet potato
  • 1 chicken breast
  • 2 tablespoon 10-Ingredient Ranch Dressing linked above
  • ΒΌ cup buffalo sauce I like The New Primal Best
  • 1 cup water

Instructions
 

  • Place chicken breast in Instant Pot with 1 cup water and cook on high pressure for 12-18 minutes depending on size of chicken breast. If chicken breast is frozen, cook for 20 minutes.
  • Wash and wrap sweet potato in paper towel. Poke multiple holes in potato with fork. Microwave for 5-8 minutes, again depending on size of potato. Just be sure it is cooked to fork tender.
  • When chicken is done, shred it. Cut potato in half.
  • Stuff potato with 1 cup shredded chicken. Top with ranch dressing and buffalo sauce to your desired amount. Enjoy!
