Before the Whole30 I never knew how much of a vehicle sweet potatoes would be. Shoot, I barely ate sweet potatoes! Now I use them any chance I get to stuff them with some sort of meat, sauce and other veggies. If you think this sounds weird... keep scrolling I promise I will change your mind. I am all about simple, quick meals that can last you all week, whether it be for lunch or dinner. This meal is one that can last me all week if I want it to. However, I can make lots of shredded chicken and use them in other meals throughout the week. Variety and simplicity are key to my weekly meal planning if you can't tell by now! Another way to switch this meal up is by using different variety of sweet potatoes. The white sweet potatoes are my absolute favorite, it is more starchy than the orange ones, but tastes the same. There are also purple ones, which are delicious, too! However you choose to make your stuffed sweet potatoes, be sure you get a yummy sauce to top it with and you will be set!
Buffalo Chicken Sweet Potato
Ingredients
- 1 medium size sweet potato
- 1 chicken breast
- 2 tablespoon 10-Ingredient Ranch Dressing linked above
- ¼ cup buffalo sauce I like The New Primal Best
- 1 cup water
Instructions
- Place chicken breast in Instant Pot with 1 cup water and cook on high pressure for 12-18 minutes depending on size of chicken breast. If chicken breast is frozen, cook for 20 minutes.
- Wash and wrap sweet potato in paper towel. Poke multiple holes in potato with fork. Microwave for 5-8 minutes, again depending on size of potato. Just be sure it is cooked to fork tender.
- When chicken is done, shred it. Cut potato in half.
- Stuff potato with 1 cup shredded chicken. Top with ranch dressing and buffalo sauce to your desired amount. Enjoy!
