Cinnamon Chia Seed Pudding

Ingredients
  

  • ¼ Cup Chia seeds
  • ¾ Cup Vanilla almond milk
  • 1 tablespoon Nut butter almond, cashew, etc
  • ¼ Green apple diced
  • ½ Banana sliced
  • ½ tablespoon Coconut oil
  • 1 teaspoon Cinnamon
  • Sliced almonds to top

Instructions
 

  • Combine chia seeds, almond milk and nut butter into mason jar (or other container) and mix with spoon until nut butter is broken up and combined into mixture.
  • Refrigerate for at least 2 hours. It is better to let it sit over night.
  • When you are ready to eat it, heat coconut oil in a pan on medium. Add diced apple, banana and cinnamon to pan and sauté until apples are fork tender. This should only take about five minutes.
  • Top chia seed pudding with cinnamon coated fruit and sliced almonds. ENJOY!

Notes

  • Add any other warm spices you like- pumpkin spice would be great!
  • Make enough for a few days at a time because it saves well in the fridge.
