Loaded Breakfast Fries

Do you struggle with creative breakfasts when you are on a Whole30 or just in everyday life? Because I definitely do! I am not a huge breakfast lover and always have struggled to find things I love to eat in the morning. Through the Whole30 I have found that I do enjoy eating "non-breakfast" breakfast foods the most. One thing I love at any hour are fries... so I created Loaded Breakfast Fries.

The great thing about these is that you can prep most of it ahead of time and use any veggies that you like most! I love a breakfast that I only have to cook once or only take a few minutes in the morning. If you are prepping these ahead of time, make all your fries and all your veggies. These will store nicely and heat either in your air fryer or a pan really quickly in the morning- while your eggs cook!

These Loaded Breakfast Fries are also perfect for the end of the week when your fridge is running low and you need to use bits and pieces of all your veggies. If you have never seen my Potacho recipe, this can be a really similar concept- I am obsessed. 

Don't be afraid to create new breakfast recipes that may not be your traditional "breakfasts". Remember that it is simply just another meal and you can eat anything you want in the mornings that nourish your body the exact same way!

Tips for Loaded Breakfast Fries:

  1. Use your favorite kind of potato or what you have on hand.
  2. Make sure you have some hot sauce to top it!
  3. Use any veggies you like or have to make this your own.
  4. If you don't like eggs, you can use sausage or ground meat for protein.

Ingredients
  

  • 1 Sweet Potato cut into fries
  • 2 tablespoon Avocado oil
  • 1 cup Mushrooms
  • ¼ cup Green bell peppers- diced
  • ¼ cup Red onion- diced
  • 2 slices Turkey bacon- roughly chopped
  • 2 Eggs
  • Hot sauce for topping

Instructions
 

  • Coat your sweet potato fries with olive oil, salt, and pepper. Place them in the air fryer for 20 minutes at 400 degrees, being sure to shake them every few minutes. If you are using the oven, place the coated fries evenly spaced on a sheet pan. Cook on 400 for 20-25 minutes or until slightly crispy.
  • While the sweet potato fries are cooking, heat a pan to medium heat with 1 tablespoon avocado oil. Cook your mushrooms, green peppers, and onions in the pan for 5 minutes.
  • Once your veggies are cooked, crack 2 eggs into the same pan and cook them until they are over easy (or to your preference).
  • Once the fries are done, put those as your bottom layer on a plate. Then add your mushrooms, green peppers, and onions next. Finally, top with your eggs. Push some hot sauce on top and enjoy!
