During the summer months no one wants to be spending a lot of time in their kitchen. It is warm, sunny, and everyone would rather be outside enjoying the beautiful weather. This can leave you in a predicament for dinner time, though! This healthy BBQ Chicken Bowl is the answer to your any summer night. It requires little cooking, little prep, and are ready in a pinch. Even better, it can be customizable so the entire family can be fed with one easy recipe.
I love making a bunch of grilled chicken at the beginning of the week to make for easy meals all week long. For the recipe you can either cook your chicken that night or use any left over chicken that you have! All you have to do is add BBQ sauce and veggies for a delicious, nutrition meal.
This bowl was inspired by bbq chicken pizza which is one of my all-time favorite pizzas. It has all the same toppings that I love on that pizza, but in a bowl. Fresh pineapple, jalapenos, caramelized onion, and my favorite part... pepperoncinis! The best part about a bowl is that you can serve it over any base you like. I personally like rice or cauliflower rice, but you can always put it over lettuce too!
Tips for BBQ Chicken Bowl:
- Use left over chicken for an easy weeknight meal.
- If you are doing a Whole30 serve it over cauliflower rice or lettuce, if not then you can also serve it over any grain!
- Use any veggies you like in this. I like things spicy so I added a few peppers.

BBQ Chicken Bowl
Ingredients
- 2 Chicken Breasts cooked and shredded
- 2 cups Cooked rice Cauliflower or regular
- 1 tablespoon Olive oil
- ½ Red onion thinly sliced
- 1 Jalapeno sliced
- 1 Avocado sliced
- 1 cup Pineapple Chopped
- 6 Pepperoncinis sliced
- Cilantro garnish
- 1 cup BBQ Sauce
Instructions
- Cook your desired rice according to the package (brown rice, cauliflower rice, etc).
- While the rice is cooking, heat 1 tablespoon of olive oil in a pan to medium heat. Then add the onions. Saute for about 5 minutes.
- When onions are fork-tender, add the chopped pineapple to the pan. Let this warm in the pan for about 3 minutes. The pineapple may get slightly brown in the pan and that is ok, do not cook it until it is mushy.
- Warm the chicken either in a pan or the microwave with ¾ cup of the BBQ sauce (save the rest for topping). Make sure the chicken is thoroughly coated with sauce and heated through.
- Assemble your bowl! Add the rice and chicken, then add pineapple, onion, jalapenos, pepperoncinis, avocado and cilantro.
- Top with extra BBQ sauce and serve. Enjoy!
