At our house, vegetable side dishes are a must at each meal, but that doesn't mean it has to be complicated! This easy side dish is a delicious way to get veggies on the table for weeknight meals. I love just being able to put them on a sheet tray, season, and roast with no fuss. The delicious result is the best roasted green beans you've ever made.

Green Beans: are a low-calorie vegetable rich in essential nutrients such as vitamins K, C, and A, along with dietary fiber. Helping support bone health, boost the immune system, and aid in maintaining healthy vision and skin, green beans are a great addition to a plate.

Garlic Powder: is known for its anti-inflammatory and antibacterial properties. It helps fight many diseases like the common cold, heart disease, and others.

Italian Seasoning: Italian seasoning is typically a mix of thyme, rosemary, basil, oregano, and marjoram. With all these spices, it has tons of flavor and lots of health benefits because each herb has its own healthy properties! I really like Primal Palate Amore seasoning, but any Italian seasoning works.

Olive Oil: It is really important to get a high-quality olive oil and one that is 100% olive oil and single origin. The food industry likes to cut corners when it comes to oils, so be sure you check your labels.

Recipe Variations

  • Garlic: Fresh garlic is always an option for this recipe to make delicious garlic green beans, but I typically use garlic powder just to make it quicker. If you want fresh garlic, just toss 2-3 minced cloves with the green beans before roasting.
  • Avocado Oil: This is always an option instead of olive oil, and I highly recommend it if you are going to air fry or grill these green beans because of its high smoke point.
  • Additional toppings: This green bean recipe is a great base if you want to add any extra toppings to them, like crispy shallots, pine nuts, roasted almonds, parmesan cheese, or even some lemon zest to give it some bright flavor.

  1. Toss the seasoned green beans on a sheet tray in a single layer. Put in the oven for about 15 minutes. Check for doneness at 15 minutes, and if they aren't done, cook for another 5 minutes or until desired crispness.

  • Pre-cut green beans: A huge time saver for me in this recipe is buying pre-cut green beans, so you don't have to trim them. They are a little bit more money, but make these green beans perfect for a healthy side dish for any quick, weeknight meal.

Storage Tips

These Roasted Green Beans will last in the fridge for 2-3 days in an airtight container. To reheat them, I microwave (quickest), air fry, or stick them back in the oven for 5 minutes or until warm. They usually aren't as crispy the next day, but just as delicious.
