These Healthy Almond Joys are a wholesome twist on the classic treat, made with just five simple ingredients and no refined sugar. They're rich, creamy, and full of that irresistible chocolate-coconut flavor, without any of the processed ingredients. This easy, no-bake treat comes together in under 20 minutes and is perfect for keeping in the fridge when you have a sweet tooth.

Almond Joys are one of my favorite candy bars out there! This homemade Almond Joy recipe twist on them is very easy to make and is just as delicious as the real thing. These are the perfect treat to have out during the holiday season or just to keep in your fridge when you are craving something sweet. I like to make them bite-sized so I can just pop them in my mouth.

Ingredients You Will Need

Dark Chocolate (I like Enjoy Life): with a high cocoa content and low sugar (or no) content, can offer several potential health benefits when consumed in moderation because it is a powerful antioxidant!

Coconut oil: is a heart-healthy fat that has tons of nutritional benefits. However, the type of coconut oil matters; virgin coconut oil, which is less processed, is generally preferred for its higher nutrient content and flavor.

Unsweetened coconut (shredded): has a naturally rich, nutty flavor with a subtle sweetness and chewy texture that adds depth to both desserts and savory dishes. It's packed with healthy fats and fiber, making it a nourishing ingredient that supports energy and metabolism.

Coconut butter: is ground-up coconut meat, similar to nut butter. My favorite coconut butter is from Artisana Market.

Almonds: have high levels of heart-healthy monounsaturated fats, fiber, and essential vitamins and minerals. Consuming almonds can help lower the risk of heart disease, support weight management, and provide a good source of antioxidants and energy-boosting nutrients.

Recipe Variations

  • Coconut butter: This can be substituted for any kind of nut butter you like! Peanut butter to make a Reeses, almond butter for another variation, or any other of your favorite nut butters will work great.
  • Chocolate: To keep these on the healthier, blood sugar-friendly side, I use dark chocolate; however, milk chocolate is just as delicious.

Instructions

  1. Pour the chocolate into a bowl along with the coconut oil. Microwave for 30 seconds, then stir, repeating until the chocolate is completely melted (about 2 minutes total).
  2. Fill silicone molds ⅓ of the way full with melted chocolate. Refrigerate for 10 minutes.
  3. While the chocolate is refrigerating, combine the coconut butter and shredded coconut in a small bowl. If your coconut butter is solidified, microwave for 30 seconds at a time, stirring until smooth and pourable.
  4. Once the chocolate has hardened, fill each mold another ⅓ full with the coconut mixture.
  5. Top with the remaining chocolate (you may need to reheat it slightly to soften), then add an almond on top and cover with a thin layer of chocolate.
  6. Refrigerate for another 10 minutes, then enjoy!

Recipe Tips and Tricks

  • Use silicone molds for easy removal and perfect shape.
  • Warm coconut butter just enough to make it smooth, not hot.
  • Add a sprinkle of flaky sea salt before chilling for a sweet-salty combo.
  • Store extra Almond Joy bites in the fridge for a cool, satisfying treat anytime.
  • Using a double boiler to melt the chocolate is an option, too, but takes a little patience, which is why I like the microwave.

Storage Tips

Keep your Homemade Almond Joys in an air-tight container in the refrigerator for up to 2 weeks, or freeze for up to 2 months. Enjoy straight from the fridge for the best texture.

Can I use regular chocolate chips?

Yes, but choose dark or dairy-free chocolate for a lower-sugar option.

What's the difference between coconut butter and coconut oil?

Coconut butter includes the whole coconut (meat + oil), giving it a richer flavor and creamier texture.

Do I need silicone molds?

They make the process easier, but you can also use mini muffin liners instead.

Can I make them nut-free?

Absolutely, just leave off the almond or swap it for a roasted sunflower seed. You can also use sunflower seed butter if you prefer that over coconut butter.
