Almond Joys are one of my favorite candy bars out there! This homemade Almond Joy recipe twist on them is very easy to make and is just as delicious as the real thing. These are the perfect treat to have out during the holiday season or just to keep in your fridge when you are craving something sweet. I like to make them bite-sized so I can just pop them in my mouth.

Coconut oil: is a heart-healthy fat that has tons of nutritional benefits. However, the type of coconut oil matters; virgin coconut oil, which is less processed, is generally preferred for its higher nutrient content and flavor.
Unsweetened coconut (shredded): has a naturally rich, nutty flavor with a subtle sweetness and chewy texture that adds depth to both desserts and savory dishes. It's packed with healthy fats and fiber, making it a nourishing ingredient that supports energy and metabolism.
Coconut butter: is ground-up coconut meat, similar to nut butter. My favorite coconut butter is from Artisana Market.

- While the chocolate is refrigerating, combine the coconut butter and shredded coconut in a small bowl. If your coconut butter is solidified, microwave for 30 seconds at a time, stirring until smooth and pourable.
- Once the chocolate has hardened, fill each mold another ⅓ full with the coconut mixture.
- Top with the remaining chocolate (you may need to reheat it slightly to soften), then add an almond on top and cover with a thin layer of chocolate.
