Healthy Tortilla Soup

This Healthy Chicken Tortilla Soup recipe is a flavorful tortilla soup made with healthy ingredients like chicken, sweet corn, cauliflower rice, and delicious spices. It's a comforting dish that the whole family will love, packed with protein and fiber for a balanced meal. Serve it with your favorite toppings for a delicious and wholesome twist on a classic!

I am a huge soup fan because it's so comforting and you can pack so many nutrients into one little bowl. This is a great recipe for a weeknight meal because it is simple, delicious, and great for meal prepping! The Siete Enchilada sauce gives it a little kick but is still a tasty recipe for the entire family. It is on my list of favorite soup recipes and I can't wait for you to try it!

Ingredients You Will Need

Chicken: I like to ensure my chicken is organic and doesn't have antibiotics. Chicken breasts are a great source of lean protein.

Chicken Broth: When looking for chicken broth be sure you are checking the ingredients and the source that it comes from. I prefer to buy one with no extra preservatives, sugar, or coloring, and that is organic.

Siete Red Enchilada Sauce: The healthiest (and best) enchilada sauce I have found! It has a little bit of a kick and is so flavorful. 

Corn: is a nutrient-dense whole grain that provides fiber, B vitamins, and essential minerals like magnesium and potassium. Its flavor profile is naturally sweet and mildly earthy, with a crisp, juicy texture when fresh and a subtle, nutty taste when roasted.

Cauliflower Rice: A nutrient-rich vegetable that is low in calories and high in fiber, making it an excellent choice for weight management and digestive health. It is also a good source of vitamins, especially vitamin C and vitamin K, which support immune function and bone health.

Yellow Onion: Onions are full of antioxidants that help fight inflammation. They also have folate, manganese, and some vitamin C. They are antibacterial, help digestion (for some), and can help reduce your risk of cancer.

Green Chilis: Green chilis are low in calories but packed with vitamins A, C, and K, as well as capsaicin, which may help boost metabolism and reduce inflammation. They offer a sharp, fresh heat with a slightly grassy and peppery flavor, adding a vibrant kick to dishes without overwhelming them.

Olive Oil: It is really important to get a high-quality olive oil and one that is 100% olive oil and single origin, the food industry likes to cut corners when it comes to oils so be sure you check your labels.

Garlic: is known for its anti-inflammatory and antibacterial properties. It helps fight many diseases like the common cold, heart disease, and others.

Cumin: This is a powerful spice that is used in many different cultures. It is one that helps promote digestion, is full of iron, is a powerful antioxidant and so much more!

Taco Seasoning: Siete Taco Seasoning is a blend of spices like chili powder, cumin, and paprika, and is free from refined sugar and artificial additives, making it a nutrient-conscious choice that is also gluten-free and paleo-friendly. It delivers a balanced, smoky, and mildly spicy flavor with earthy and slightly sweet notes, perfect for enhancing tacos, fajitas, and other Mexican-inspired dishes.

Lime Juice: This adds a nice tartness to the dressing to help balance out the sweetness 

Recipe Variations

  • Enchilada Sauce: Any Red Enchilada Sauce will work, however, I have found that Siete has the best ingredients. 
  • Extra Veggies: If you are looking to get some extra veggies into your meal I recommend adding yellow, orange, or red bell pepper to this soup.
  • Extra protein: If you are looking for some more protein, a can of black beans would be a great addition to this meal.

Instructions

Step 1: Preheat a pan to medium-high heat and add 1 Tablespoon of olive oil to the pan. *If you have pre-cooked chicken, skip to step 3.*

Add chicken breasts to the pan and season with salt and pepper. Cook for 8 minutes on one side, then flip it and cook for another 8 minutes or until the chicken reaches 165°F. Remove the chicken from the pan and cut into bite-sized pieces.

Step 2: Heat a large pot to medium-high heat and add 1 Tablespoon of olive oil to the pan. Add diced onion, cauliflower rice, and frozen corn to the pan. Saute for 5 minutes.

Step 3: Add minced garlic, cumin, taco seasoning, salt, and pepper to the pan and saute for another 5 minutes. 

Step 4: Add the Siete enchilada sauce, chicken broth, green chilis, cooked chicken, and lime juice to the pan. Bring the soup to a simmer and let it simmer for about 15-20 minutes.

Recipe Tips and Tricks

  • Toppings: I recommend topping this with some fresh cilantro, avocado, a dollop of Greek yogurt (more protein) or sour cream, and some homemade tortilla strips. *See the What to Serve It With section for the crispy tortilla recipe. 
  • Cooked Chicken: To make life easier I always like to use leftover shredded chicken, but rotisserie chicken also makes this dinner very simple. 

Storage Tips

Refrigerator: Healthy Chicken Tortilla Soup will last in the fridge for up to 5 days if stored in an airtight container after cooling. This leftover soup might even be better the next day!

Freezer: This is a great soup to freeze, just store it in a freezer-safe container for up to 3 months.

What To Serve It With

  • Homemade Crispy Tortilla Strips: Cut Siete tortillas into thin strips and place them on an even layer on a sheet pan. Then spray them with avocado oil and sprinkle with salt. Bake at 400°F for about 8 minutes or until golden brown and crunchy.
  • Appetizer: Chicken Taquitos would be a great addition to this meal.

Is tortilla soup gluten-free?

Absolutely! Just use grain-free tortillas, like Siete or corn tortillas, and make sure any store-bought broth or seasonings are labeled gluten-free.

What are healthy toppings for tortilla soup?

Avocado, fresh cilantro, Greek yogurt or full-fat (organic) sour cream, and a small amount of baked tortilla strips add flavor and nutrition.
