Crispy Oven Roasted Broccoli

One thing that I hear over and over with my clients is that they feel like healthy meals have to be time-consuming and take a lot of effort. My number one tip to eating healthy is to keep it simple, but delicious! This Crispy Oven Roasted Broccoli is a side dish that I pair with any meat. It is easy, has minimal ingredients and nutrient packed.

If you grew up on steamed broccoli as I did, this recipe will change your life. It takes about the same amount of time as steam broccoli but has so much more flavor. I use basic spices: salt, pepper, and garlic powder. However, the key is to add some acid to really bring out all the natural flavors of the broccoli. I juice lemon over the top before putting it in the oven and it really makes all the difference!

If you know me, I do love my air fryer and use it almost every day. I do love making my broccoli in there too for an even quicker time-saver- so feel free to take this recipe to your air fryer if you have one. I like the oven for this recipe because if you don't watch your broccoli in the air fryer it can go from crispy to charred very quickly! The oven just gives me a little buffer.

Tips for Crispy Oven Roasted Broccoli:

  1. If you are really in a time pinch, buy pre-cut broccoli. No shame in having the work done for you!
  2. If you have an air fryer, cook the broccoli on 400 for 5 minutes.
  3. If you are making this ahead for the week, let it cool off before you put it in a container in the fridge. It will steam it and make it soft if you put it away too quickly.
  4. Another great seasoning to add to this is Everything Bagel Seasoning. I like The New Primal's best. You can use the code ALTITUDE for 15% off your order.

Ingredients
  

  • 12 oz Broccoli (about two heads)
  • 1 tablespoon Olive Oil
  • ½ Lemon juiced
  • 1 teaspoon Garlic Powder
  • ½ tsp Salt
  • 1 teaspoon Pepper

Instructions
 

  • Pre-heat the oven to 425°F.
  • Cut the broccoli into equal-size florets. I like to do bite-sized so it makes it easier to eat.
  • Place foil or parchment paper on your sheet pan. This step is optional but makes for easier clean-up.
  • Put the broccoli evenly spaced on the pan. Drizzle the olive oil and lemon juice over the broccoli. Then sprinkle salt, pepper, and garlic powder on top. Mix the broccoli with your hands until it is all coated.
  • Place the pan in the oven and cook for 15 minutes.
  • Then turn the oven on broil for 2 minutes. Be sure to keep an eye on the broccoli during this step because it can burn quickly.
  • Serve and enjoy!
