    Cinnamon Chia Seed Pudding

    Fall is the time of apples, cinnamon, cozy food, sweaters and beautiful colors. So why not add all of these into one simple breakfast that is easy to take on the go. Below is a decadent spin on my favorite breakfast- Cinnamon Chia Seed Pudding. It has sweetness from the apples (hello fall), bananas and plenty of cinnamon. It reminds me a bananas foster (obviously not made with flames) but it gives me the satisfaction of cooked bananas, cinnamon over a cool chia seed pudding. This doesn't leave me feeling deprived or craving even more sugar! I also get the same satisfaction I would get from the cooked apples in apple pie. I eat this for breakfast on those fall crisp days and it leaves me feeling cozy all day.

    Fall can also a time for lots of baked goodies, sugar overload and guilt for so many people. Food should not cause guilt, there are some special things we look forward to every season. Pumpkin pie, apple pie, apple cider, pumpkin cookies are naming a few, however, why do these cause guilt? They are a special treat that we only have during the fall! Is it because we overdo it and then don't feel good? Is it because these foods aren't actually "worth it" and we could find healthier options that taste just as good?

    I am not here to answer these questions for you, but to give you OPTIONS that might help you overcome this guilt. Sure, some pumpkin bread is always worth it, but when we bake/eat 10 loaves, is it still just as special? Probably not! Enjoy whatever feels worth it to you, then find those flavors in other foods that make you feel just as cozy.

    Don't be afraid to experiment outside your box of what fall flavors you do love and create a healthy spin, you may never know what emotional pull these foods have on you and how you can enjoy those same flavors without guilt, overdoing it or any other negative feelings. Play with YOUR food freedom.

    Tips for Cinnamon Chia Seed Pudding:

    1. Add any other warm spices you like- pumpkin spice would be great!
    2. Make enough for a few days at a time because it saves well in the fridge.

    Cinnamon Chia Seed Pudding

    Servings 1 person

    Ingredients
      

    • ¼ Cup Chia seeds
    • ¾ Cup Vanilla almond milk
    • 1 tablespoon Nut butter almond, cashew, etc
    • ¼ Green apple diced
    • ½ Banana sliced
    • ½ tablespoon Coconut oil
    • 1 teaspoon Cinnamon
    • Sliced almonds to top

    Instructions
     

    • Combine chia seeds, almond milk and nut butter into mason jar (or other container) and mix with spoon until nut butter is broken up and combined into mixture.
    • Refrigerate for at least 2 hours. It is better to let it sit over night.
    • When you are ready to eat it, heat coconut oil in a pan on medium. Add diced apple, banana and cinnamon to pan and sauté until apples are fork tender. This should only take about five minutes.
    • Top chia seed pudding with cinnamon coated fruit and sliced almonds. ENJOY!
